Rocky Road Chocolate

MY FAVORITE of all time. I promise. This is so AMAZINGLY good that just me writing the recipe down makes me want to run to the kitchen right now and make a batch! This is the perfect crunchy chocolate, sooo tasty and packed with good fats and superfoods. I love the fact that you can switch up the recipe a bit everytime you make it, try to throw some new nuts or berries in it.. I kind of go with the "the more the better" when I make this chocolate. I put everything yummy in it!
1 dl coconut oil
3 tbsp coconut butter (optional, if you have it at home - great. if not don't worry! it will be tasty anyway)
1/2 dl honey (or natural sweetener of choice)
a pinch of salt
2-3 tbsp cacao powder
1 tbsp carob powder (optional)
a handfull of almonds/hazelnuts or both ;)
1/2 shredded coconut
1 dl oats
4 dried figs
2 tsp raw vanilla powder or vanilla liquid
ps. you can also add things like gojiberries, cacao nibs, raisins. Everything tastes good in this chocolate!
Melt coconut oil, coconut butter, honey together on low heat in a pot. ( make sure it does not burn! have it on very low heat and stir it often, the point is to make it melt- not boil!).
Add cacao, carob, vanilla, salt, and shredded coconut.
Chop the figs and nuts in semi-small pieces ( I kind of like the nuts thick and crunchy).
Add the nuts and figs to the chocolate and then add the oats. Stir it around so everything is covered in chocolate. Place a baking sheet on a tin or plate with tall edges. (I use a pretty small plate with tall edges, that makes the chocolate thicker and crunchier) And pour the chocolate on to the tin/plate. Store the chocolate in the freezer for about 30 min and it should be hard and ready to be eaten. I usually cut my chocolate in small square pieces and then put them back into the freezer, in that way I can take a piece whenever my sweet tooth kicks in ;)
