Pretty Beet Latte

Updated: May 5, 2019

Pretty in pink. This latte has the most beautiful color and is such a trendy drink right now that I just HAD to give it a try. And I must say, it was amazing. I could not imagine what the taste would be like, before I actually took my first sip. And it has such a sweet (and healthy) taste. I'm hooked! And I think this is the perfect " do you want a cup of tea" drink when you have a friend over. Just watch the smile on her/his face when you serve her this beautiful pink drink. Try it ;)

You will need a juicer OR you can boil the beet and blend it so it pretty much becomes a juice and then just strain it so no lumps will get into the drink.

1 cup of beet Latte

Ingredients:

1 cup of oat milk ( oat milk is naturally pretty sweet so it's perfect for this)

2 tbsp of beet juice

A 2 cm piece of ginger

1 big tsp coconut oil

1 tsp cinnamon

a squeeze of honey (optional, if you want it a bit sweeter)

1 tsp cardamom (optional)

Directions:

Juice the beet and the ginger chunk. (or if you don't have a juicer: boil a beet and mix it so it becomes as close to juice as possible and add the chunk of ginger into the blender and mix it all together.. Strain the juice into a bowl so there are no chunks left.

Heat the milk in a pot on low heat. Add all the ingredients above and stir it together. ( If you have one of those little hand hold latte mixers then feel free to use it here to give the milk a little bit of bubbles and fluff.

Pour into your favourite cup and enjoy!

Ps. If I want to drink this as my coffee, I usually add one black tea- Chai bag and let it soak in the milk before I add the rest. In that way you get a little dose of Caffeine into your drink.. If you so need a little 'wake up' in your day!

Have a lovely day! Go be awesome, and do something for you today. xx Pearl
