Fig & Carrot Scones

What's better than the smell of fresh baked bread? It kind of beats everything. These scones are the perfect match to your avocado AND your coffee. I eat them as they are, without any toppings.. because I think they taste soo good.


  • 1 dl shredded carrot

  • 1 chia egg ( 1 tbsp chiaseeds in 2 tbsp of water in a glass for 5 min)

  • 3 tbsp melted coconutoil

  • 2,5 dl glutenfree flour

  • 0,5 dl tapioca starch

  • 0,5 dl coconut flour

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 4 dried figs


  1. Use a food processor.

  2. Blend the melted coconut oil, honey, and the chia egg together in the food processor. Mix all the dry ingredients in a separate bowl, and then add it into the the other mix - blend.

  3. Last but not least, add the shredded carrots and chop the figs into small pieces and add them to the dough. Give it all one last spin ( you may have to add water if you think the dough is too dry and does not stick together. Add a tiny bit of water, until you a dough forms).

  4. Prepare a tray with a baking sheet. Roll the dough into 7-9 balls, pat it out a bit and bake them on 175°c for about 20 min.


Slice them in halves and enjoy with avocado, salt & pepper. Or with strawberry jam and coconut cream.
